Ingredients
- 5 Cape Gooseberries - husk removed and halved.
- 4 Fresh Figs - quartered
- 1 Onion - sliced
- 1 Cucumber - halved and sliced
- 3 Iceberg lettuce - torn
- Fresh Herbs - Handful like basil
- 2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Honey
- 2 teaspoons Lemon juice
- 1/2 teaspoon Lemon zest
- 1 teaspoon Black pepper powder - (or as required)
- Salt - to taste
Instructions
- To begin making the Cape gooseberry salad, first make the dressing
- In a small bowl or glass jar whisk together the ingredients under’ for the dressing’, the lemon juice, olive oil, honey, lemon zest, black pepper powder and salt
- In a mixing/salad bowl toss together the cape gooseberries, figs, onion, cucumber and lettuce
- Drizzle the dressing over the vegetables and fruits and toss the ingredients well to combine
- Garnish with herbs and serve
