Goan Bimbla Uddamethi Recipe

Ingredients

  • 5-6 Bimbla (Bilimbi)
  • 1 Cup Fresh coconut - grated
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Turmeric powder (Haldi)
  • 20 Grams Jaggery - adjust according to your taste
  • 1 Tablespoon Sunflower Oil
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1 teaspoon White Urad Dal (Split)
  • 1 teaspoon Mustard seeds
  • 10-12 Curry leaves
  • Asafoetida (hing) - a pinch
  • Salt - to taste

Instructions

  1. To begin making Goan Bimbla Uddamethi Recipe, wash Bimbla 3-4 times
  2. Cut them into very small cubes
  3. In a heavy bottomed pan, bring a cup of water to a boil and add the chopped Bimbla
  4. Let the bimbla sit in the boiling water until they soften
  5. Meanwhile, grind grated coconut along with red chili powder and turmeric powder using a spoon of water
  6. Add the coconut paste in the boiled bimbla
  7. Add jaggery to the pan as well
  8. Add some water just to thin it out and allow this mixture to boil
  9. While curry is boiling, prepare the tempering
  10. In a pan heat oil on medium heat
  11. Add Fenugreek seeds, Urad dal, mustard seeds and Curry leaves
  12. Cover and let the seeds crackle on low heat
  13. Once the mustard seeds have crackled, add asafoetida and remove from heat
  14. Pour this tempering over the boiling curry
  15. Add salt as per your taste
  16. Stir the mixture until everything combines
